Cooking help needed!


I need some VERY easy casserole dish idea's or any idea's that do not require more than about 5 ingredients total. :) Once, at a church function, I had this chicken & broccoli casserole that was served over rice and it was sooooo good. Anyone know how to do that? I think it had some sour cream in it and melted cheese on top. I could also use some good crock pot recipes. It seems that we are always on the go so I would like to have the crock pot do all the cooking for me. :) Thanks for your help!

Hmm, I'm not great, but I've found a lot of help in crockpot cook books...

MIL does a casserole with can cheese soup (like cream of Campbell stuff) and chicken, and broccoli, and she puts croutons on top believe it or not!

½ large onion, chopped
2 teaspoons EVOO
1 clove garlic, minced
1 pound hamburger
1 16 oz can enchilada sauce
1 can sliced black olives
soft butter
corn tortillas
shredded jack cheese

Saute onion an garlic in the hot oil. Add ground beef. Once it’s brown, add enchilada sauce and olives, heat through.

Lightly butter 1 corn tortilla and place it butter side up in your crock pot. Spread with a layer of meat sauce and a layer of cheese. Continuing layering until you reach the top of your crock pot (or until you run out of ingredients), making sure you end with cheese. Cover and cook on high for one hour, or on low for two hours. Cut into wedges and serve with sour cream and green onion.

EASY:

shredded chicken (cooked) Mix it with
1 C sour cream (can be light)
1 can Cream of Chicken soup
1 can corn (or any veggie you want to add)

line bottom of casserole with this mixture. Then pack on top of 2 boxes of stove top stuffing (already cooked --I do it in the microwave)

Then just heat in the oven for a few min. on 350 till heated through:)

The chicken & rice looks yummy...How do you get the rice cooked through? Every time I've tried to make it in the past, the rice comes out crunchy. Not good! Have you ever precooked the rice before assembling the casserole? Hmm...

Noelle - I didn't make the one in the pic. I found the pic on-line and it looks like what I had at the church dinner. lol I could never make something that would look as good as that... :)

My mom makes a chicken and rice casserole and the rice always comes out done.

Here' my 5 ingredient dish...

Baked ziti (lazy woman's lasagna)

1 lb. box ziti/penne (or if you can find them...mini lasagna noodles)
1.5 lbs. ground beef
1 jar favorite pasta sauce
1 lb. ricotta
2 cups shredded mozzarella

Cook meat, drain. Cook pasta, drain. In a large bowl, mix pasta, meat, sauce, ricotta and 1.5 cups of cheese. Put in a 9x13 casserole dish. Top with remaining cheese. Cover, bake 45 min. @350. Uncover, bake another 10-15 min, until cheese is all melted and just starting to brown.

i make this super-easy chicken dish when i don't have enough time for a cassarole to bake...

cook some chicken (usually a breast or two)
add any veggies you want (fresh or frozen)
add some rice
cover with water and cook until the rice is cooked just stirring every now and then so the rice doesn't burn.

it's easy and yummy!! to shake it up you can add a can of seasoned rotel or season the chicken while you're cooking it. the best part is, only one dish gets dirty!!

My favorite new thing? Taco soup! It's super easy and impossible to mess up. Brown 1-2 pounds of ground beef (ground turkey works, too!) and put it in your slow cooker with two packages of taco seasoning, two packages of ranch dressing mix, two cans of black beans, two cans kidney beans, two cans hominy, at least two cans of stewed (or diced or crushed...) tomatoes, and 1-2 cups of water. Add some frozen corn and lime juice if you like, and I like to garnish it with chopped cilantro, chopped avocado, and shredded montery jack. You can make just about any kind of substitution with this recipe according to your family's tastes, and it always turns out. Perfect for these chilly days! :)
